google_product_category is the value that places your product into Google's official product taxonomy, telling Google what kind of thing it is using a category from their predefined list.

Google maintains a fixed taxonomy of thousands of categories, from broad ones like 'Apparel & Accessories' down to specific ones like 'Apparel & Accessories > Clothing > Shirts & Tops'. The google_product_category attribute assigns each product to one of these exact categories, either by its full text path or its numeric ID.

It matters because the category affects where and how your products show, which attributes Google expects, and in some cases tax and policy handling. Picking a category that is too broad or simply wrong can hurt visibility or trigger requirements you did not expect.
